Menus for Jan 27 - Feb 2

I am having a lot of trouble with google and it will not always let me log in so this is late. Sunday - chicken fajita soup Monday - pork chops, baked potatoes and broccoli Tuesday - chicken breasts, sweet potatoes and cauliflower Wednesday - whitefish, coleslaw, carrots and cauliflower Thursday - leftovers Friday - sausage, baked potatoes and veggie Saturday - meeting future in laws - dd's fiancee parents Breakfasts will be choice of oatmeal, eggs and bacon or cold cereal. Lunches will be choice of sandwiches, mac and cheese or leftovers. I am trying to use up our fresh veggies before they have seen better days.  I will still have salad stuff to use after this week.

Chicken Fajita Soup

I am not sure where I got the recipe for this but I made it for the first time today and if was amazing !!!! I wish I could remember who to give the credit to but I just have to share the recipe. Chicken Fajita Soup 1 box chicken broth or 3 15 oz cans 1-2 packs of taco seasoning 3-4 chicken breasts, cooked and shredded 1 onion chopped 5 stalks of celery, chopped 3 cans of Rotel tomatoes with chilies, reg or mild 1 -2 cans of black beans, rinsed 1 bag frozen corn 1 tsp minced garlic Dump everything in the crockpot and cook on low 6-8 hours or high 4-5 hours.  I served it with sharp cheddar on top.  Yummy !!!!!

The Garden 2013

One of the things we have worked on today has been plans for this years garden.  We need to expand it as I need to eat more fresh veggies and fruits then last year.  We are looking at making raised beds using concrete blocks that I am going to paint.  This should make it easier for me to keep them weeded and tended.  We are hoping to plant our spring garden next month (hopefully).  We are wanting to plant cabbage, broccoli, cauliflower, kale, winter lettuce, kohlrabi, beets and maybe even brussels sprouts.  I have ordered organic seeds that I will get in March so most of these will be plants that we buy at the Amish garden center.  Their plants are always awesome so I don't mind. More plans to come soon.

Saturday night

Today has been a wonderful, kinda lazy day.  I went to the gym and worked out 30 minutes then my wonderful ds and his fiancee took dh and I out for lunch.  After that I pittled in the kitchen and have been on line a little bit but nothing serious.  Dh is so exhausted after work each week that all he wants to do is sleep on Saturday.  It makes it hard to plan things. I am hoping to stay up to watch the hockey game tonight (Preds) but we'll see.  It doesn't start until 9:30pm and by then I am usually ready for bed. I need to see if the chicken is thawed yet and bag up the black beans before bed though.  Planning chicken fajita soup tomorrow.

Menu Jan 20 -26

I know I am a day behind but I was struggling to get my menu done. Sunday - lunch = eat out                dinner - Zuppa soup with salad Monday - chicken stir fry with noodles Tuesday - chili with cheese Wednesday - spaghetti with meatballs and salad Thursday - leftovers Friday - pollock, veggies and baked potato Saturday - chicken, veggie and baked potato Breakfasts will be a choice of oatmeal, eggs and bacon or cold cereal Lunches will be a choice of meat sandwiches, leftovers or soup

I've been MIA

I know I have been MIA recently.  Just not feeling well right now.  The dampness of this week is really affecting me and my fibro.  Hoping to get to the gym today and some exercise making me feel better.  The weight is still coming off.  I have lost 23 pounds since surgery and 60 pounds overall.  I go back to the surgeon for a follow up today.  Hopefully he will be happy with this weight loss. I plan on writing more later.  See you then.
